
Summer Chicken

Even though this is a warm dinner, it's best served on a hot summer's night. My children love it, but adults think it's more of a date night or dinner party dish. It has a light taste perfect for summer.

Even though this is a warm dinner, it's best served on a hot summer's night. My children love it, but adults think it's more of a date night or dinner party dish. It has a light taste perfect for summer.
Steps

Season chicken breast with pepper and Italian seasonings on both sides. Start pasta water and cook pasta as per package directions.

Spray a large frying pan with Pam and heat on medium high.

Pan sear chicken on both sides for around 5 minutes, or until chicken is nicely browned and fully cooked

While chicken is finishing up, melt butter in microwave, after melting add flour and stir until well mixed with no lumps.

Remove chicken from pan and set a side. Pour in chicken stock and white wine. Whisk the browned bits into the liquid and heat to boiling.

Add spinach and tomatoes, then whisk in rue (butter flour) let thicken over heat until it coats a spoon or desired thickness.

Add Chicken back to pan to re-warm and sauce up.

Serve Chicken and sauce over pasta, top with Parmesan cheese if desired.
