Use any vegetables you like, thats the beauty of this versatile recipe! I have found a bigger breakfast is really assisting in my weight loss but you can make less if preferred.

Chop your onion up and put half in one pan with your frozen hashbrowns and the other half in your egg pan. Add salt and pepper to both pans if you like.

Sautee your hashbrowns with onion on med and about half way through, start the egg pan up and sautee the onion. When the onions start to turn translucent, add eggs whole and mix in the pan.

Move hashbrown onto a plate, dress with your choice of sauce (chipotle mayo for me 😎) and put your eggs on top.
