Vietnamese Fried Spring Rolls

Wash the pork and mince it with a little salt, shallots, and pepper.

Clean the shrimp and remove the veins if present.

Soak the glass noodles, shiitake mushrooms, and wood ear mushrooms in warm water until they expand, then chop finely.

Arrange all ingredients in a large bowl, crack the eggs, and mix well.

Prepare a bowl of water. Lay the spring roll wrappers on a tray or clean surface. Sprinkle a little water and proceed to wrap.

Heat a pan and use low heat to fry. Meanwhile, prepare a large basket lined with newspaper or paper towels.

Make the sweet and sour dipping sauce: finely chop garlic and chili, add 2 tablespoons of sugar, then about 1 tablespoon of vinegar and 1 tablespoon of fish sauce. Mix until the garlic and chili float. Add a little lime juice.

It would be great to make a side salad with julienned cucumber, carrot, onion, and cilantro.
