Cucumber-Yogurt Tzatziki

I always make this with pitas and falafel, but it works wonderfully as a companion for grilled meat & vegetables, too! Regular plain yogurt works fine, but using Greek yogurt or straining the regular yogurt will give it a thicker, creamier texture. If you have time, give it a few hours to let the flavors really soak in after mixing everything together ;) You can add extra flavor by adding fresh mint, a few sprinkles of cumin, or extra cayenne.

Ingredients

  1. 120 mlplain yogurt, strained if possible
  2. 1small cucumber or 1/2 large
  3. 1small clove garlic
  4. 2 tsplemon juice
  5. 1/2 tspSalt
  6. to tastePepper
  7. Olive oil to drizzle over
  8. to tasteCayenne pepper, cilantro, mint (optional)

    Remove seeds (if any) from cucumber and chop finely. Squeeze lemon for juice.

    Mince garlic as finely as possible.

    In a bowl, mix cucumber, garlic, yogurt, lemon juice and salt. Adjust lemon, salt, etc. to your liking if needed. You can use right away, but if you let it sit in the refrigerator for a couple hours, it will be more flavorful.

    When ready to serve, sprinkle over just a bit of black pepper, cayenne pepper, fresh cilantro etc. if you like. Drizzle over some olive oil and it's ready to go!

    Goes awesome with falafel, grilled veggies, and all kinds of meat!
