Ingredients

20 servings
  1. 3 lbbutternut squash
  2. 2 largeegg
  3. 2 tbspbutter
  4. 1/4salt
  5. 1ground cinnamon
  6. 1nonstick spray
  7. 1/4 cupcrushed pistachio nuts
  8. 1/4 cupcrushed almonds
  9. 1/4 cupcrushed walnuts
  10. 1oil
  11. 1 1/2 tbspbaking powder
  12. 1/4 cupgrated parmesan cheese

Cooking Instructions

    Preheat oven 425° Fahrenheit

  2. 2

    Spray an oven safe pan for baking butternut squash

  3. 3

    Split the butternut squash. Remove seeds put in oven and bake 1 hour, 15 minutes. Should be fork tender.

    Remove let cool. When its cooled mash it.

  5. 5

    Mix all ingredients together. Fill a muffin pan of 12 full. The rest form into cakes and shallow fry in oil

  6. 6

    Move to paper towels to absorb excessive oil. Repeat till done. Bake the ones in pan 30 minutes.
