Oxtail Tagine with Vegetables

Sear the oxtail pieces in a nonstick skillet until browned. In a pot, add 1 tablespoon of ghee.

Add the grated onion, garlic, and sliced bell peppers. Sauté well until softened.

Add the oxtail, tomato juice, spices, salt, and black pepper to taste. Add ground cardamom, rosemary, thyme, and half a cinnamon stick.

Pour in 1 cup of water (about 240 ml), cover the pot, and let it simmer for 30 minutes until it comes to a boil. Then transfer everything to a tagine or oven-safe dish, cover with foil, and bake in the oven at 430°F (220°C) for 1 hour.
