Ingredients

  • 2.2 lbsoxtail, cut into pieces (1 kg)
  • 1 lbmixed bell peppers, sliced into rings (0.5 kg)
  • 1large onion, grated
  • 3garlic cloves
  • Black pepper
  • Salt
  • Cardamom
  • 1/2 stickcinnamon
  • Thyme
  • Rosemary
  • Thyme
  • Fresh mint leaves, for garnish
  • 1 cuptomato juice (about 240 ml)

Steps

    Sear the oxtail pieces in a nonstick skillet until browned. In a pot, add 1 tablespoon of ghee.

  2. 2

    Add the grated onion, garlic, and sliced bell peppers. Sauté well until softened.

  3. 3

    Add the oxtail, tomato juice, spices, salt, and black pepper to taste. Add ground cardamom, rosemary, thyme, and half a cinnamon stick.

  4. 4

    Pour in 1 cup of water (about 240 ml), cover the pot, and let it simmer for 30 minutes until it comes to a boil. Then transfer everything to a tagine or oven-safe dish, cover with foil, and bake in the oven at 430°F (220°C) for 1 hour.
