Ingredients

  • 3.5 ozshrimp (about 100 g)
  • 7 ozground pork (about 200 g)
  • Black pepper, sugar, fish sauce to taste
  • Tapioca starch (multi-purpose)
  • Coconut
  • Lime
  • Garlic
  • Pickled vegetables

Steps

    Clean the shrimp.

  2. 2

    Finely chop the pork; do not use a food processor, as this will make the filling too pasty.

  3. 3

    Mix tapioca starch with water in a 5:2 ratio.

  4. 4

    Knead until the dough is very elastic and not runny or sticky.

  5. 5

    Divide the dough, roll it out thin, add just enough filling, then boil the dumplings until the wrappers turn translucent.

  6. 6

    After boiling, soak the dumplings in ice water to make the wrappers chewy and not mushy.

  7. 7

    Mix fish sauce to your taste and serve with pickled vegetables for a delicious meal.
