Ingredients

  1. Sliced ginger
  2. Spring onion
  3. Garlic
  4. 1 kgfresh clams(washed and drained)
  5. Halfteaspoon Sichuan peppercorns
  6. 3-4Sichuan chillis
  7. Oyster sauce
  8. Vegetable oil
  9. Chinese cooking wine

Steps

  1. 1

    Put 3 table spoons of vegetable oil into the wok, heat up for 15 seconds

  2. 2

    Put garlic, spring onions, ginger, Sichuan peppercorns, and chilli into the wok, fry them until the aromas starts to come out.

  3. 3

    Add clams into the wok, 2 tablespoons of wine, 4-5 tablespoons of oyster sauce. Stir fry. Put the lid on. Medium heat, 2 minutes. Stir half way

  4. 4

    Switch off the heat. Serve hot.
