Ingredients

4-6 servings
  • 1 kglamb knuckles
  • 1 punnetportobello mushrooms halved
  • 500 gwhole baby potatoes
  • 1-2whole star anise
  • 2-3bay leaves
  • 1red onion finely diced
  • 1carrot finely diced
  • 1-2celery sticks finely diced
  • 1-2whole dried red chillies
  • 1 tspdried thyme
  • 1 tspdried Italian herbs
  • 2 canschopped Italian tomatoes
  • 4Tblsp tomoato paste
  • 2 tspcrushed ginger and garlic
  • to tasteSalt, pepper and brown sugar

Steps

  1. 1

    Prepare potjie (I used a No 2 pot) by heating oiled pot over hot coals - boil water in the potjie and then discard

  2. 2

    Add good quality extra virgin olive oil and heat pot to smoke point. Brown meat in small batches - remove and set aside

  3. 3

    Braise onion, carrot and celery until soft. Add mushrooms and braise uncovered for 5 minutes

  4. 4

    Add garlic, ginger, whole spices and dried herbs and braise covered for approx 10 min

  5. 5

    When the mixture is nice and fragrant, add canned tomatoes and tomato paste and a cup of water and simmer over medium heat, pot covered (approx 20 min)

  6. 6

    When sauce is thick and well incorporated, return meat to the pot and continue to simmer for another 45 minutes. Season to taste with salt, pepper and brown sugar

  7. 7

    Add potatoes and simmer until they are done. Remove potjie from the coals and leave to stand for 20 minutes

  8. 8

    Serve tomato Bredie with rice or pap and a glass of red wine. Delightful

when can I add white or red wine and I also want to use pickle onions when do I add this. Thank you.
