Succulent Tomato Potjie
A juicy and morerish tomato Bredie made in a "potjie" (a traditional 3-legged cast iron pot). A perfect winter's indulgence accompanied by a quality glass of Cape winelands Shiraz and a roaring log fire. Enjoy!
Steps
- 1
Prepare potjie (I used a No 2 pot) by heating oiled pot over hot coals - boil water in the potjie and then discard
- 2
Add good quality extra virgin olive oil and heat pot to smoke point. Brown meat in small batches - remove and set aside
- 3
Braise onion, carrot and celery until soft. Add mushrooms and braise uncovered for 5 minutes
- 4
Add garlic, ginger, whole spices and dried herbs and braise covered for approx 10 min
- 5
When the mixture is nice and fragrant, add canned tomatoes and tomato paste and a cup of water and simmer over medium heat, pot covered (approx 20 min)
- 6
When sauce is thick and well incorporated, return meat to the pot and continue to simmer for another 45 minutes. Season to taste with salt, pepper and brown sugar
- 7
Add potatoes and simmer until they are done. Remove potjie from the coals and leave to stand for 20 minutes
- 8
Serve tomato Bredie with rice or pap and a glass of red wine. Delightful
