Pad See Ew (Thai Stir-Fried Wide Rice Noodles)

Prepare the ingredients: Peel and cut the Chinese broccoli. Slice the pork as desired and marinate with light soy sauce, brown sugar, and ground black pepper for 10 minutes.

Heat a wok and add the oil. Once hot, add the minced garlic and stir-fry until golden. Add the marinated pork and stir-fry.

When the pork is almost cooked, add the rice noodles and dark soy sauce. Toss everything together until well mixed.

Add the Chinese broccoli. Season with light soy sauce and brown sugar. Stir-fry until combined.

Push the noodles to one side of the wok and crack the egg into the empty space. When the egg starts to set, scramble it with a spatula, then mix it into the noodles.

Stir-fry until everything is cooked through and well combined. Serve hot.
