Moroccan Tagine with Olives

In a pressure cooker, heat oil over medium heat and add the onions and garlic.

Then add the chicken pieces that have been cleaned with lemon and flour, and let them dry.

Add the spices, salt, cilantro and parsley bunch, and cinnamon stick.

Let it cook over low heat.

Then add enough water and reduce the heat.

When you feel it's cooked, open the lid and add lemon, olives, a splash of olive oil, and let it cook for 10 minutes.

In Morocco, we traditionally cook this in a tagine and let it simmer gently over very low heat.
