Ingredients

  1. 1chicken, cleaned and cut into pieces
  2. 1little flour
  3. 1/2 teaspoonturmeric
  4. 1 teaspoonginger
  5. 1/2 teaspoonblack pepper
  6. 1 bunchcilantro and parsley
  7. Salt
  8. Oil
  9. Seedless lemon
  10. Olives
  11. 2large onions
  12. 1little olive oil
  13. A fewsaffron threads
  14. Pickled lemon
  15. Chicken broth or water if not available
  16. 1cinnamon stick
  17. 2 clovesgarlic, crushed

Steps

  1. 1

    In a pressure cooker, heat oil over medium heat and add the onions and garlic.

  2. 2

    Then add the chicken pieces that have been cleaned with lemon and flour, and let them dry.

  3. 3

    Add the spices, salt, cilantro and parsley bunch, and cinnamon stick.

  4. 4

    Let it cook over low heat.

  5. 5

    Then add enough water and reduce the heat.

  6. 6

    When you feel it's cooked, open the lid and add lemon, olives, a splash of olive oil, and let it cook for 10 minutes.

  7. 7

    In Morocco, we traditionally cook this in a tagine and let it simmer gently over very low heat.
