Stir-Fried Squid with Rice Noodles

Soak the dried rice noodles in hot water for 10 minutes until softened. Drain well.

Cut the onion, Chinese broccoli, and cucumber into bite-sized pieces.

Slice the squid into bite-sized pieces.

Sauté chopped shallots in a pan until fragrant. Add the cucumber and Chinese broccoli and stir-fry briefly. Add the squid and onion, and stir for 1 to 2 minutes. Add the rice noodles and toss everything together.

Do not cook too long or the squid will become tough. Season to taste. Sprinkle with black pepper.

Transfer to a serving plate.
