Boil noodles

In large pan: melt butter and stir in flour (to make a rue). Stir in milk, cream cheese, salt/pepper, and Dijon. Stir until creamy.

Put cubed cheddar into 9x13 pan. Put in drained noodles, pour sauce on top. Stir around gently. Top with crushed ritz crackers.

Bake 400. 20 minutes
