Wash the unripe plantain, cut into half, and place them into the pot; add water just to cover the plantain peels with a little salt and drop on heat to cook for about 15 minutes

Wash and dice the pepper,onions and leaf keep aside (you can choose to blend them but roughly).

Check from time to time to see if it is well soften, at this point you will notice the peels turning brown and the inside becoming more yellow which shows that it is well cooked. Plantain gets harder when it’s cooled down, so make sure you cook it to become very soft before bringing it down.Put down from heat and set aside to cool off

Using a medium pot, heat up the olive oil Pour the diced onions and pepper into the oil allow fry for 10 seconds

Add your cray fish, seasoning cube and the leaf then stir and turn off the heat allowing to simmer

Now peel off your plantain,cut to your desired shape and Serve with your vegetable sauce
