Peel and dice the cucumbers.

Finely slice the chili pepper and chop the cilantro if using fresh.

Lightly toast the sesame seeds in a small skillet. Be careful—they toast quickly. It should take about 2 minutes.

In a skillet, add 3 drops of olive oil and the nuts. Toast until lightly golden, then remove and gently crush them with a mortar and pestle.

Add 4 more drops of olive oil to the skillet and toast the cumin seeds until golden.

Add the sliced chili pepper and remove the skillet from the heat.

Add the diced cucumber and salt. If it splatters, cover with a lid and shake the skillet gently.

Do not return to the heat.

Serve immediately once it reaches room temperature.
