Ingredients

  1. 2small cucumbers
  2. 1 tablespoonraw, unsalted peanuts
  3. 1 tablespoonblack or white sesame seeds
  4. 1 teaspooncumin seeds
  5. 1green chili pepper
  6. 1little cilantro
  7. Salt
  8. 2 tablespoonspeanuts, sesame seeds, or sliced olives, sautéed in olive oil

Steps

  1. 1

    Peel and dice the cucumbers.

  2. 2

    Finely slice the chili pepper and chop the cilantro if using fresh.

  3. 3

    Lightly toast the sesame seeds in a small skillet. Be careful—they toast quickly. It should take about 2 minutes.

  4. 4

    In a skillet, add 3 drops of olive oil and the nuts. Toast until lightly golden, then remove and gently crush them with a mortar and pestle.

  5. 5

    Add 4 more drops of olive oil to the skillet and toast the cumin seeds until golden.

  6. 6

    Add the sliced chili pepper and remove the skillet from the heat.

  7. 7

    Add the diced cucumber and salt. If it splatters, cover with a lid and shake the skillet gently.

  8. 8

    Do not return to the heat.

  9. 9

    Serve immediately once it reaches room temperature.
