I don't remember who gave me this recipe, but it's very tasty. I bake them under the broiler for a lighter version and skip the egg in the mixture. I also replace the bread with whole wheat rusk crumbs. For the tomato, I use homemade tomato sauce.

Mix all the ingredients for the soutzoukakia and refrigerate the mixture for at least one hour.

Shape the soutzoukakia and fry them in hot oil.

Prepare the sauce: Lightly sauté the onion and garlic. Add the herbs, tomato, water, and spices.

Once it comes to a boil, add the soutzoukakia and simmer until the sauce thickens.
