A few more tips:
When I take it out of the oven, I let it rest for a bit, then cover it with a towel and place a plastic bag on top. I do this to soften the crust, since we don’t like it too crispy.

In a large skillet or pot, heat the olive oil and sauté the green onions and leeks. Add the spinach and cook until its liquid evaporates.

Remove from heat and transfer to a large bowl.

Add the dill (or parsley), eggs, cheeses, salt, and pepper. Mix well.

Preheat your oven to 350°F (180°C).

Brush a baking pan with olive oil. Layer 3 sheets of phyllo on the bottom, then add some filling. Add another sheet of phyllo, more filling, and continue layering until the filling is used up. Reserve 2 sheets to cover the top.

When finished, score the top and sprinkle lightly with water. Bake for 45–50 minutes, until the pie is golden brown. Good luck!
