Ingredients

  1. 500 gramsbroccoli florets
  2. 250 gramswhole wheat penne
  3. 1/2 cupthe water from boiling the penne
  4. 1red bell pepper, sliced
  5. 2 tablespoonsfinely chopped parsley
  6. 1 stalkcelery, finely chopped
  7. 1 tablespoonlight margarine
  8. 1 cuplight milk
  9. 100-150 gramsshredded mozzarella (use more or less according to your taste)
  10. freshly ground pepper
  11. 1little salt

  1. 1

    Boil the penne with a little salt and remove them 2-3 minutes earlier than the package instructions. Reserve 1/2 cup of the water from boiling the penne.

    In a large and deep non-stick skillet or pot (whatever you have), place the broccoli with the penne water over low heat and let it absorb all the liquids, on low heat.

  3. 3

    Once the liquids are absorbed, add the bell pepper and celery, mix well, and gradually add the milk.

  4. 4

    After about 1-2 minutes, add the margarine and let the sauce thicken.

  5. 5

    Add the penne, parsley, and mozzarella, and mix well.

  6. 6

    Turn off the heat after 1 minute, remove the pot from the stove, and season with freshly ground pepper. Enjoy!
