Instead of mozzarella, you can use unsalted ricotta or any cheese you like. Mozzarella was chosen because it is very light in texture and flavor. For a stronger taste, you can also use a vegetable bouillon cube in the water where you boil the penne.

Boil the penne with a little salt and remove them 2-3 minutes earlier than the package instructions. Reserve 1/2 cup of the water from boiling the penne.

In a large and deep non-stick skillet or pot (whatever you have), place the broccoli with the penne water over low heat and let it absorb all the liquids, on low heat.

Once the liquids are absorbed, add the bell pepper and celery, mix well, and gradually add the milk.

After about 1-2 minutes, add the margarine and let the sauce thicken.

Add the penne, parsley, and mozzarella, and mix well.

Turn off the heat after 1 minute, remove the pot from the stove, and season with freshly ground pepper. Enjoy!
