This is served in Sfakia (Anopoli) on the eve of a marriage with plenty of wine.

Soak the chickpeas overnight and boil them in the morning.

Using a large pot, pour the oil and sear the meat until it is whilte on all sides. Finely chop the onion, add it to the pot and sauté everything for about three minutes.

Add the wine and stir softly until it evaporates.

Add the salt, pepper and cumin. Continue with the tomato and let it boil.
- 5
Finally, when the meat is cooked, add the chickpeas and continue boiling for ten more minutes.
