Caesar Salad

A delicious and, above all, very quick salad—especially if you have leftover cooked chicken on hand. This version skips anchovies and eggs, but is just as tasty. The recipe makes a large serving for 4 people.

A delicious and, above all, very quick salad—especially if you have leftover cooked chicken on hand. This version skips anchovies and eggs, but is just as tasty. The recipe makes a large serving for 4 people.
Steps
- 1
Wash the iceberg lettuce thoroughly and cut it into thick strips. Drain well.
- 2
If you have cooked chicken, cut it into small pieces. If you need to cook it: wash the chicken breast, pat it dry with a paper towel, season with salt and pepper, and cook in a preheated nonstick skillet with 1 tablespoon olive oil.
- 3
For the dressing: In a small bowl, combine the mayonnaise, mustard, olive oil, grated garlic, lemon juice, salt, and pepper. Mix very well until smooth and creamy.
- 4
To serve, layer the ingredients in plates or bowls in this order: iceberg lettuce, dressing, croutons, chicken, and Parmesan cheese.
