Wash the iceberg lettuce thoroughly and cut it into thick strips. Drain well.

If you have cooked chicken, cut it into small pieces. If you need to cook it: wash the chicken breast, pat it dry with a paper towel, season with salt and pepper, and cook in a preheated nonstick skillet with 1 tablespoon olive oil.

For the dressing: In a small bowl, combine the mayonnaise, mustard, olive oil, grated garlic, lemon juice, salt, and pepper. Mix very well until smooth and creamy.

To serve, layer the ingredients in plates or bowls in this order: iceberg lettuce, dressing, croutons, chicken, and Parmesan cheese.
