
Taco Casserole

In the early years of our marriage, I found a recipe for Beef Nacho Casserole, which Joe and I both loved. Years went by, and I forgot about the casserole. In 2016, I remembered how much we had enjoyed it and wondered if our kids would too. Rachel and I found a similar recipe, modified it to our taste, and made it. It was a hit! No matter how often we eat it, Joe always comments about how long it's been since he last had it.
Taco Casserole

Preheat the oven to 350 degrees F (175 degrees C).

Place ground turkey in a large skillet over medium-high heat. Cook, stirring to crumble, until evenly browned. Drain liquid. Remove from the heat. Stir the salsa, corn, mayonnaise and chili powder into the meat.

In a 2 quart casserole dish, layer the ground turkey mixture, tortilla chips and cheese twice, ending with cheese on top.

Bake for 20 minutes uncovered in the preheated oven, until cheese is melted and dish is thoroughly heated.
