Boiled and stirfried pork heart

Boiled pork heart: Put 1 heart in a pot and cover with water.

Add a pinch of salt and boiled at high temperature.

Once water is boiling, turn down the heat to medium low and boil until no blood come out of the heart when it is poked with a knife.

Take the heart out to cool and cut into thin slices. If it still looks a little raw, put all the slices back into the pot and boil until meat turns grey.

Dip in fish sauce or soy sauce as you eat.

Stirfried pork heart: Cut the heats into thin slices.

Dice up the onion and celery.

Heat the pan on high temperature. Add a tbsp of cooking oil. Once the oil is hot, add onion and stir until the onion has translucent colour.

Add pork heart, 1/2 tsp of salt and a pinch of dashi stock. Stir well until the meat change to brown colour. Taste and add more salt if needed.

Throw in the celery, stir a little bit more and remove from heat.

Serve with rice and vegetables soup.
