Ingredients

  1. 10straw mushrooms
  2. 3 1/2 ozoyster mushrooms (about 100 grams)
  3. 1-2 piecesgalangal
  4. 3-5 stalksculantro (or substitute with cilantro if unavailable)
  5. 3tomatoes, halved
  6. 10-15Thai bird's eye chilies
  7. 2 stalkslemongrass
  8. 3-5kaffir lime leaves
  9. 5 tablespoonslime juice (about 75 ml)
  10. 5 tablespoonssugar (about 60 grams)
  11. 1 1/2 teaspoonssalt (about 8 grams)
  12. 3-5 tablespoonslight soy sauce (about 45-75 ml)

Steps

  1. 1

    Lightly crush the galangal, lemongrass, kaffir lime leaves, and chilies, then add them to a pot with about 4 cups water (1 liter). Bring to a boil.

    Add the tomatoes and mushrooms to the pot. Season to taste.

  3. 3

    Once everything is cooked, turn off the heat. Stir in the lime juice, sprinkle with culantro (or cilantro), and serve.
