Press chopped garlic into one side of the lamb and face down on a roasting dish.

Chop capsicums, onion, tomato and chorizo. Place around the lamb.

Combine rosemary, thyme, salt, pepper and olive oil in a separate bowl and mix well.

Evenly Rub the mix on to the top of lamb this will make a light crust when roasted.

Cube the butter and place around the lamb. You don't have to use all the butter.

Place in a preheated oven at 200°c for 10 min. Turn the heat down to 180°c for 1½ hours for medium rare. For well done (like the photo) cook for 2 hours.

Tilt the dish to spoon on the juices. Serve ASAP.
