Ingredients

  • 2 cupsflour
  • 1 teaspoonbaking powder
  • Halfteaspoon bicarbonate of soda
  • Pinchsalt
  • Halfcup sugar
  • 100 gbutter or margarine - softened
  • 50 gbutter or margarine - melted
  • 3large eggs
  • 2 tablespoonsbrown sugar and ground cinnamon mixed together

Steps

    In a bowl, mix flour, baking powder, salt, bicarbonate of soda and sugar. Rub in the soft butter until it resembles bread crumbs. Add lightly beaten eggs and knead into a soft dough. Roll on a flat surface with a rolling pin making a rectangular shape. Brush with melted butter, then sprinkle all over with cinnamon sugar. Roll two long sides of the rectangle till they meet in the middle.

    Place on a tray and leave in the fridge for 15 minutes to firm up. Then cut into slices and place in a baking tray.

    Bake at 180 degrees centigrade for 20 - 25 minutes or until golden brown.
