Ingredients

10 people
  • 500 gbest quality diced stewing beef
  • 2 tinschopped tomatoes
  • 5 tbspolive oil
  • 350 gfrozen or tinned sweetcorn
  • 2aubergines chopped into 1cm cubes
  • 2courgettes chopped into 1cm cubes
  • 300 gsmall button mushrooms
  • 350 gkidney beans (soaked overnight if using from dried)
  • 350 gcannelini beans (soaked overnight if using from dried)
  • 500 mlbeef or chicken stock
  • 3onions chopped thinly
  • 4 clovesgarlic finely chopped
  • 3carrots chopped small
  • 3 stickscelery chopped small
  • 2 tspsmoked paprika
  • 2 tbsptomato paste
  • 4 tspchilli flakes (or to taste)
  • Salt and pepper
  • 4 tspcrushed cumin seeds
  • 4 tspcrushed coriander seeds

Steps

  1. 1

    Fry the beef in 2 tbsp in batches until browned. Scoop out the pan and set aside. Also reserve any cooking juices that escape during frying.

    Use the remaining olive oil to fry the onions, garlic, celery, and carrots on a medium heat until the onions go transparent.

    Add the courgettes and aubergines. Stir frequently to avoid them sticking. Allow the vegetables to go soft adding more olive oil if needed.

    Add the mushrooms and allow to brown slightly.

    Add the paprika, cumin, coriander and chilli.

  6. 6

    Return the meat to the pan and stir.

  7. 7

    Add the meat juices and tinned tomatoes, stock, kidney beans, cannelloni beans, sweet corn and tomato purée.

    Bring to the boil then cook for up to 3 hours on a low heat.
