Steps

Cut brinjals into diced pieces. Wash them and add salt and leave it for two minutes.

Roast the jeera (cumin) and red chilli dry in a pan. Crush it and make powder.

Fry brinjals in deep oil, soak it in a tissue paper.Cool it.

Beat curd, add little sugar and salt. Add ginger and green chilli. You can add little water to maintain curd's consistency if needed.

Add little oil in pan and add panch puran, curry leaves add little water. Cool this tadka and keep aside.

Add brinjals and tadka. Add that powder, mix well.

Delicious Dahi Baingan is ready.
