Ingredients

2 hours
4 servings
  • 1/4 cupflour
  • 2 tspsalt
  • 1 tsppepper
  • 1 tspdried thyme
  • 2 tbspbutter
  • 8chicken thighs
  • 4 slicecrisp bacon
  • 1/2onion cut into small strips
  • 1bell pepper cut into small strips
  • 2ribs of celery
  • 1 tbspfresh minced garlic
  • 1 tbsptony chachere's seasoning
  • 128 ounce can of pettite diced tomatoes with juices
  • 1 cupwhite rice

  1. 1

    combine flour, salt & pepper and thyme in bowl.

  2. 2

    in large skillet, melt butter over medium heat.

  3. 3

    dredge chicken in flour mixture on all sides and brown in skillet. set aside chicken and leave 1 tbls fat in skillet.

  4. 4

    cook bacon in the skillet until crispy. crumble and save for topping.

  5. 5

    add onion, bell pepper, celery, garlic, and tony's seasoning to skillet and saute for 7 minutes.

  6. 6

    stir in tomatoes and juices, bring to a boil the turn down and simmer for 10 minutes.

  7. 7

    season with salt and pepper and add chicken thighs back to mixture. let simmer, covered, for 45 minutes.

  8. 8

    serve over white rice and sprinkle crumbled bacon over the top.
