Ingredients

  1. 1 tbspolive oil
  2. 1 smallonion, chopped
  3. 1 clovegarlic
  4. 4chicken thigh fillets, sliced
  5. 250 gramsmushrooms, sliced
  6. 1 literchicken stock
  7. 1Salt & pepper to taste
  8. 100 gramsthin egg noodles
  9. 8spring onions, sliced
  10. 1 cansweet corn

Cooking Instructions

    Heat oil in large saucepan. Sauté onion and garlic until onion is tender.

    Add chicken. Sauté, stirring for 5 min or until the chicken is cooked through.

  3. 3

    Add mushrooms. Cook for 1 min.

  4. 4

    Pour stock and seasonings over chicken. Bring to the boil then reduce heat. Simmer for 10 min.

    Stir in noodles and corn. Simmer for a further 5 min.

  6. 6

    Stir most of the spring onions through the soup.

  7. 7

    Serve garnished with remaining spring onions. Enjoy :)
