Ingredients

  • 2capsicums(hoho), the green one
  • 1tomato, sliced
  • 1onion sliced
  • 6potatoes thinly diced
  • 2carrots, peeled and sliced
  • 4eggs
  • Cooking oil and salt

Steps

  1. 1

    In a hot pan add in the cooking oil and cook the onions until golden brown.

    Once the onions are ready, add in the tomatoes and cook until soft to crush together.

  3. 3

    Once the tomatoes are ready add in the carrots, potatoes and a pinch of salt to taste. At this point you can also add in the spices if you like.

    On medium heat, leave above to cook as you prepare the capsicum as below.

    On each capsicum, cut at the ends of each in a round shape to create a hollow part in each.

    Use the insides of the capsicum and add on to the pan.

    On the pan, create space at the center and place the capsicum there and closely place the other ingredients around the capsicum so as to cook its skin.

    At this point, easily crush on each egg and pour the contents into the capsicum as shown. 2 eggs for each.

    This is what you should have.

    Reduce heat and cover to cook for the first 15mins.

    Afterwards, turn the capsicum to cook on the other side. And also mix up the other ingredients to avoid burning.

    Once ready, serve as per your liking. I served mine with sliced pieces of avocado. Enjoy!
