  1. 1 dashkosher salt
  2. 1 dashfresh cracked pepper
  3. 1/2 cupmayo
  4. 1/4grated parmesan
  5. 4 tspitalian bread crumbs
  6. 4boneless skinless chicken breasts halves

    Preheat oven to 425°F

  2. 2

    Season chicken breasts with salt and pepper to taste

  3. 3

    Combine mayo and parmesan cheese in a small bowl

  4. 4

    Spread mayo mixture over seasoned chicken breasts

  5. 5

    Sprinkle bread crumbs over chicken. You can add more bread crumbs if desired. I usually add more!

  6. 6

    Bake chicken at 425°F for 25-30 minutes until juices from chicken run clear

  7. 7

    I used an 8x8 dish to cook the chicken, and I placed a small amount of olive oil in the bottom of the dish. I served this with mashed garlic cheese potatoes and broccoli

I used nonfat plain greek yogurt instead of mayo, and plain panko breadcrumbs with a ranch seasoning packet. It was a hit! I cut my piece up and topped a salad with it and it was fantastic. Next time I'm going to make it into nuggets or strips for some extra crunchiness :ohyeaah This is such a versatile recipe you can use plain breadcrumbs and any kind of seasoning you want! I'll definitely be making again, and again and again.....
