Ingredients

  • 24 largefresh mushrooms
  • 1 carton(8 ounces) reduced fat spreadable chive and onion cream cheese
  • 1 cup(4 ounces) crumbled blue cheese
  • 4green onions, chopped fine (I use the white part only)
  • 2minced garlic cloves
  • 3/4 cupbacon bits, divided

Steps

  1. 1

    Wash mushrooms thoroughly and pat dry.

  2. 2

    Remove stems from mushrooms and set caps aside.

  3. 3

    Discard stems or save for another use.

  4. 4

    In a small bowl, combine cream cheese, blue cheese, garlic, onions and 1/4 cup bacon bits.

  5. 5

    Stuff into mushroom caps, a scant tablespoonful in each.

  6. 6

    Sprinkle with remaining bacon bits.

  7. 7

    Place into a greased 15 X 10 X 1 inch baking pan.

  8. 8

    Bake at 375°F, uncovered for 18 to 22 minutes, or until mushrooms are tender.

Some of my favorite things are family, friends, my pets, cooking, baking, football (Badger & Packer), Brewer baseball, college basketball, car racing, thrift stores, volunteering, and rummage sales. I have a 9 year old rescue dog, and 7 birds ( 6 are rescue) and they range in age from 1 year to over 19 years old. I volunteer for a dog rescue and a shelter, as well as other festivals and organizations.
