Cut the arbi in Julienne and wash

Baingan also cut in Julienne and wash

Take a kadai (wok) heat oil add ajwain, jeera, adrak, chilles. saute for 2 minutes

Add arbi baingan and saute for 5 minutes

Add haldi, chilli powder and salt. Cook for 15-20 minutes or till soft

Add coriander powder, aamchur powder, and lemon juice. Mix well.

Serve hot with paratha
