Ingredients

6 servings
  • 1 1/2 kgchicken, cut into pieces
  • 6 cupswater or 1500 ml
  • 2 tablespoonsvegetable oil
  • 3medium onions or 500 g, finely chopped
  • 3 clovesgarlic, crushed
  • 1small fresh ginger, peeled and crushed
  • 1 tablespoontomato paste
  • 2large potatoes or 500 g, cut into large cubes
  • 4baby zucchini or 500 g, peeled and cut into thick slices
  • 2medium eggplants or 500 g, peeled and cut into large cubes
  • 4medium tomatoes or 600 g, chopped
  • 3dried limes
  • 2small chili peppers, green, chopped
  • 3 cubesChicken Stock Bouillon CubeXBuy Now
  • 1 tablespoonarabic mixed spicess
  • 1 teaspoonground cinnamon
  • 1 teaspoonground turmeric
  • 1 teaspooncurry powder
  • 1 teaspoongarlic powder
  • 1 teaspoonground coriander
  • 1 teaspoonwhole cardamom pods
  • 1/4 teaspoonchili pepper
  • 1medium green bell pepper or 150 g, cut into thick slices
  • 1 cupcoriander leaves or 75 g, chopped

Steps

  1. 1

    Place chicken pieces in a large pot, cover with the water, and bring to boil skimming froth as it appears, cover and cook on low heat for 20 minutes.

    Drain and reserve stock. Heat oil in a large pot, add and cook onions until golden brown.

    Add garlic, ginger, tomato paste, potato, baby zucchinis, eggplants, tomatoes, dried limes, stir and cook for 3-4 minutes.

    Add the chicken pieces, reserved chicken stock, Chicken Stock cubes, all spices and bell pepper.

    Bring to boil, cover and simmer for 10 minutes.

    Add coriander, simmer for another 10 minutes or until potato and chicken are tender.
