This is an easy one pot meal which you can leave to simmer in the oven. Long and slow makes the meat tender and delicious.
Steps

Place the lamb in a baking tray and surround with the vegetables.

Add the rosemary and garlic.
- 3
Pour the stock and oil over the meat and vegetables and make sure everything is coated.

Salt and pepper to taste.

Cook on a low heat (150degrees) for 2.5 hours. Check towards the end of the cooking time to make sure its not catching.

You can cover with silver foil if necessary.

Serve with green beans.
