I used to help my mom make this for thanksgiving dinner as a kid. Everyone loved it so much there was never any left over!

Boil yams and apricots together until yams are soft enough to mash

Preheat oven to 350° when yams are done boiling

In a large bowl mash yams and boiled apricot together

Add butter, juice, brown sugar and cinnamon together with the yams and mix well

Spoon yam mixture into an oven safe casserole dish and spread evenly
- 6
Top with marshmallows until yams all covered
- 7
Place in oven uncovered and bake for 10-15 min. or until marshmallows on top are lightly golden and slightly oozing.

Serve as a side dish at thanksgiving or any occasion! enjoy!
