Ingredients

  1. 1 tbspolive oil
  2. 1 tbspsunflower spread/butter
  3. 450 gramssliced beef, rump or sirloin
  4. 1large onion, sliced
  5. 1 tbspcornstarch
  6. 300 gramsbutton mushrooms, sliced
  7. 200 mlVickys Sour Cream recipe, link below, or use coconut cream mixed with a tbsp lemon juice
  8. 100 mlbeef or mushroom stock
  9. 1 tbspmustard powder
  10. 1 tbsptomato puree/paste
  11. 1/2 tbspVickys GF Worcestershire Sauce recipe, link below
  12. 1 tspsweet paprika
  13. 1/4 tspcayenne pepper
  14. 1 tbspchopped parsley

Cooking Instructions

    Heat the butter and oil in a deep frying pan and add the beef strips and onions

  2. 2

    Lightly fry off to soften but don't colour the onions, around 2 minutes. Add the cornstarch and mix into the meat juices

    In a jug, mix together the stock, sour cream, mustard, tomato puree, Worcestershire, paprika and cayenne

  5. 5

    Pour into the pan and bring to the boil then let simmer for 5 minutes

  6. 6

    Stir in the parsley, adjust the seasonings to taste and serve over mashed potato, steamed greens, pasta or rice
