Ingredients

  1. 1/2 cupblack rice
  2. 1/2 cupquinoa
  3. 1/2 cuplentils
  4. 1/2 tspsalt
  5. 1/4 tsppepper
  6. 1 headkale, torn into bite sized pieces
  7. 1/2 cupcherry tomatoes, sliced and deseeded
  8. 1cucumber, diced
  9. 1red onion, diced
  10. 4 ozgoat cheese, crumbled
  11. 1/3 cupchia seeds
  12. 1balsamic vinaigrette

Steps

  1. 1

    Cook rice, lentils, and quinoa according to package directions. Rinse in cold water and press the excess water from it. Season with salt and pepper and chill 2 hours.

    Toss vegetables.

  3. 3

    For each serving, place vegetables on a plate, 1/4 cup grain mixture, a tablespoon of goat cheese, and a tablespoon of chia seeds.

    Drizzle with dressing.
