Ingredients

  1. 2 1/2 lbthick skirt steak
  2. 1/3 cupsoy sauce
  3. 1/2 tbspworcestershire sauce
  4. 1/4 cuprice vinegar
  5. 1/2 cupolive oil
  6. 1 tbspgranulated garlic (or 2 tablespoons minced garlic)
  7. 1 tbspMexican oregano
  8. 1 tspground cumin
  9. 1 tbspThai red chili flakes
  10. 2 tbspagave nectar or light brown sugar
  11. 1/2 tspground ginger
  12. 1/4 cuporange, lemon or lime juice (option for short marinade)
  13. 1water if needed
  14. 1other options - juice added towards the end, citrus peel used in the long marinade, lemon pepper when grilling, etc

Steps

  1. 1

    Mix all of the ingredients and then in a plastic bag or dish add the steak. Add water if needed for coverage.

  2. 2

    Marinate 4 hours or overnight.

  3. 3

    Grill on the BBQ at med to med - high heat until done to the desired doneness. I use a thermometer for 140° to 145°

  4. 4

    Let the meat rest for 15 to 20 minutes.
