Ingredients

  1. 2 cupmashed sweet potatoes
  2. 1/4 lbbutter
  3. 1 cupbrown sugar
  4. 1/4 tspsalt
  5. 1/2 tspcinnamon
  6. 1/2 tspnutmeg
  7. 1/2 cupevaporated milk
  8. 1/4 cupsugar
  9. 19 in. frozen pie crust
  10. 2eggs separated

Cooking Instructions

    Preheat oven to 375°F

  2. 2

    Bake sweet potato(es) until completely tender in foil. Can take up to an hour.

    Change oven to 400°F

  4. 4

    Mix sweet potatoes, butter, egg yolks, brown sugar, salt, ginger, cinnamon, nutmeg and evaporated milk. Mix well.

  5. 5

    Beat egg whites until stiff peaks form, mix in 1/4 cup of sugar. Add to sweet potato mixture.

  6. 6

    Put mixture into pie crust and bake at 400°F for 10 minutes and then reduce heat to 350°F until firm and toothpick or knife comes out clean.
