My friend, Keri and I are #vegans, but we were craving Mac & Cheese one night. I had made some half-assed attempts at this recipe before without the milk, but could not figure out how to melt vegan cheese into a saucy consistency...so we decided to give it the old college try with some almond milk, low heat, and continuous stirring...and it turned out amazing!

Ingredients

1 serving
  1. 1 1/2 cuppasta (can be macaroni, rotini, or shell pasta)
  2. 1/2 cupDaiya dairy free cheddar style shredded "cheese"
  3. 1/2 cupDaiya dairy free mozzarella style shredded "cheese"
  4. 1/3 cupunsweetened soy or almond milk
  5. 2 tbspEarth Balance non dairy buttery spread
  6. 1 dashsea salt

Steps

  1. 1

    Boil the pasta on high heat until al dente.

  2. 2

    Remove from the stove and drain the excess water. Turn the burner down to low heat. Place back on the stove and add the "butter" and the "milk" and the salt

  3. 3

    Stir in both types of "cheese".

  4. 4

    Stir CONTINUOUSLY until all the cheese and butter melt to create a thick cheese sauce. Add more milk or cheese to create your preferred consistency.
