Steps

Wash and parboil the rice while the rice is on fire break the coconut and blend or grate so you can seive out the coconut milk from the blended coconut. Note: this coconut milk is the only water that should be used in cooking the rice.

Boil your meat and liver with seasonings and dice them into an even shape and keep aside

Slice your vegetables also (green pepper, yellow pepper, spring onion, red pepper,habanero pepper, carrots and Onion) Next you seive out the water from the rice and wash out extra Starch.

Place your pot on fire, add a vegetable oil,onion and the veggies and stir fry for about 2mins so it doesn't get too soft.

Put off the fire and pour your rice,liver and beef into the pot and stir with the rest of your seasoning making sure it is evenly distributed then you add the coconut water bit by bit till the rice is soft enough for eating.

Then top it up with the rest of the beef and liver There you have it! Coconut Rice by Trays'and'Pans ready to eat with a glass of cold freshly squeezed fruit
