This is how I always make my enchiladas, and they are better than most restaurants you will try. The chicken mixture makes a huge flavor difference!

Ingredients

  1. 3 largeskinless chicken breasts
  2. 1Flour tortillas
  3. 1or 1/2 fresh jalapeno, seeded and diced
  4. 1/2 mediumwhite onion
  5. 2Garlic cloves chopped
  6. 1 canRotel diced tomatoes and green chiles
  7. 1Bundle of fresh cilantro chopped
  8. 1 canor jar of green enchilada sauce of your choosing
  9. 1 bagof monterrey cheese
  10. 1Salt, pepper, and garlic powder to taste

    Preheat oven to 350

  2. 2

    Rub chicken breasts in olive oil, sprinkle with salt and pepper and bake for 15-20 minutes, then remove, cool, and shred

  3. 3

    In the mean time, sautee the diced jalapenos on medium heat until softened. Add diced onion, and sautee for about three minutes.

    Add the chopped garlic, cook about two minutes then add in the can of Rotel tomatoes and green chiles and chopped cilantro...salt and pepper to taste.

    Add in the shredded chicken, stir to combine.

    Put the mixture into the flour tortillas and roll up, arrange side by side in a casserole dish.

    Top with green enchilada sauce and then with the Monterrey cheese.

    Bake in oven about 10-15 minutes until the cheese is totally melted

    Serve and enjoy the amazingness!! :)

There are no words other than delicious to describe this recipe. So simple and yet so yummy. Whole family loved it.
