I had a bunch of stuff laying around and put it all in a crockpot. It was relatively tasty, so I'm writing this down. Maybe next time I'll have an onion laying around and will use that, too.

Ingredients

  1. 1.5 lbchicken tenders or breast
  2. 3large cloves garlic
  3. 1large Roma tomato
  4. 1 Canblack beans
  5. ~3/4 lb baby carrots
  6. 4-5medium white button mushrooms
  7. 2-3small springs fresh rosemary
  8. 2-3 tspbasil or to taste
  9. 1-2 tsporegano or to taste
  10. to tasteSalt and pepper
  11. 3/4 cupchicken bouillon
  12. 1 cupdry white or brown rice

Cooking Instructions

  1. 1

    Quarter mushrooms, dice tomato, slice and crush garlic.

  2. 2

    Add everything to crock pot except rice.

  3. 3

    Cook on low ~ 10 hours or until everything has boiled down to a thick, stewy consistency. Stirring the pot should be enough to shred the chicken.

  4. 4

    Prepare rice.

  5. 5

    Serve chicken over rice.
