Ingredients

  1. 4 eachBellpepper
  2. 1 boxUncle Ben's rice of your choice (I like wild)
  3. 1 eachsmall onion, diced
  4. 1/2 cupmushrooms, chopped
  5. 1 candiced tomatoes
  6. 1 lbground beef
  7. 1salt (to taste)
  8. 1black pepper (to taste)
  9. 6 quartwater
  10. 1/2 stickbutter
  11. 1 1/2 cupshredded cheese of your choice

Cooking Instructions

    Preheat oven to 400°

    Hollow out bellpepper by either cutting off top or slice length-wise and then deseed (I recommend slicing length-wise for better serving portions)

    Boil bellpeppers for 3 to 4 minutes in slightly salted water

  4. 4

    Remove bellpeppers and shock in an ice bath

  5. 5

    Saute onion and mushrooms in butter

  6. 6

    Prepare rice as box instructs

  7. 7

    Brown and drain ground beef

  8. 8

    Mix onion, mushrooms, rice, ground beef, and tomato together in a bowl while hot with 1/2 cup cheese

  9. 9

    Stuff bellpeppers with mix and top with remaining cheese.

    Place in oven for 10-12 minutes (until cheese is melted throughly
