Ingredients

  1. 5Eggs or egg whites
  2. 1 cupParmesan cheese
  3. 1 cupSun-dried tomatoes
  4. 1Red potato
  5. 1Green onion
  6. 1/2 cupChopped broccoli
  7. 1 tspCayenne pepper
  8. 1 tspSalt
  9. 1as needed Black Pepper
  10. 1 tspGarlic powder

    Set the oven to broil.

  2. 2

    Shred up the potatoes, dice up the tomatoes, finely cut the cheese and chop up the scallions.

    In a large mixing bowl beat the eggs and throw then toss in the ingredients.

  4. 4

    Pre heat the cast iron skillet on your stove top and grease with butter.

  5. 5

    Pour the mix in the skillet and cook until egg starts to get firm.

  6. 6

    Once the egg is firm (should only take a few min. ) place skillet in oven on the top rack for a few minutes or until the top is browned.
