Place the cream in a bowl of an electric mixer fitted with the whisk attachment and beat on medium speed for 1 minute.

Add the sugar, rum, vanilla and mascarpone and beat on medium high speed until it forms soft peaks.

*If you overwhip the cream and it looks curdled, just add a little more cream and whip it until it forms soft peaks.*

**This recipe goes great with pumpkin pie.**
