  1. 2 cuppealed, shredded zucchini
  2. 3each eggs
  3. 1/2 cupsugar
  4. 1/4 cupsugar
  5. 1/8 cupsugar
  6. 1/2 cupbrown sugar
  7. 1/4 cupbrown sugar
  8. 1/8 cupbrown sugar
  9. 1 cupoil
  10. 2 cupflour
  11. 1/4 tspbaking powder
  12. 2 tspbaking soda
  13. 2 tspground cinnamon
  14. 2 tspvanilla extract
  15. 1 tspsalt
  16. 1/4 tspground ginger

  1. 1

    Place shredded zucchini in bowl and place a bowl on the zucchini then weigh down the bowl

  2. 2

    Whisk eggs, vanilla, oil in a big bowl

  3. 3

    Add salt, ginger, cinnamon, baking powder, baking soda

  4. 4

    Mix well

  5. 5

    Separate bowl mix sugar and flour

  6. 6

    Slowly add flour mixture to egg mixture while mixing

  7. 7

    Mix well. Scrape sides of bowl. Mix well

  8. 8

    Using a clean and thin cloth, strain zucchini from excess water

  9. 9

    Fold zucchini in batter. Fold well to ensure it is throughout the batter

  10. 10

    Grease and lightly flour a baking pan

  11. 11

    Fold bread into pan and spread it even

  12. 12

    Bake 350*F 40-60 minutes til golden brown and a knife coming out clean when pierced

  13. 13

    Cool. Cut. Serve

  14. 14

    Optional: fold in 1 cup of nuts your choice after folding in zucchini
